In the past, to prevent freshly caught threadfin bream from losing their flavor, fishermen would preserve them by submerging them in sea salt-filled jars overnight. Once ashore, the fish will be ready for cooking.
Over time, this method earned threadfin bream the moniker "overnight jar."
So if you see a dish named "pan-fried overnight jar," don't worry — You're definitely not eating the jar that's used to store the fish.
