Anchovies are difficult to keep fresh after being caught, and so for a long time they were overlooked for their perceived low economic value.
However, once fish oil production and canning preservation technology improved, anchovies suddenly became and important commercial fish.
Though for the anchovies themselves, this "status upgrade" might not be something to celebrate.
