It looks delicious, but actually isn't.

Leatherjacket Fish is a Fish Creature in Petit Planet.

Omnipedia

Omni-Gallery — Large Saltwater Zone

Scientific Name: Oligoplites saurus

While leatherjacket fish and the delicious horse mackerel both belong to the Carangidae family, the leatherjacket's larger size offers better meat yield and easier catch. This should theoretically make it a star competitor in fish markets against the mackerels.

In reality, however, due to its meat having a strange, oily taste, it's largely ignored by the masses.
